Antipasti
To start. Small plates built to share, or not.
Slow-roasted veal, tuna emulsion, salted capers from Pantelleria, crispy capers.
Burrata from Puglia, heirloom tomatoes, Ligurian olive oil, Maldon salt.
Grilled octopus, chickpea puree, smoked paprika, preserved lemon, micro herbs.
Coppa, mortadella, bresaola, grissini, mostarda di Cremona.
Slow-cooked borlotti beans, pancetta, rosemary, aged balsamic.
Primi
The pasta. Cut by hand every morning in the kitchen.
Hand-cut egg tagliatelle, slow-braised veal, Sangiovese, parmigiano 24 months.
Carnaroli rice, cuttlefish ink, Sicilian scallops, lemon butter.
Broad egg pasta, wild boar ragù, juniper, rosemary, pecorino.
Light ricotta gnocchi, sage and brown butter, hazelnuts, parmigiano.
Bronze-drawn spaghettoni, guanciale, San Marzano tomato, pecorino romano.

Our pasta is made every morning without exception. When we run out, we stop. We use semolina from a mill in Puglia and eggs from a farm in the Niagara region. Nothing comes from a box.
Secondi
Larger plates. Meat and fish from farms and importers we have used for years.
Braised veal shank, Bruce County farm, gremolata, saffron risotto.
Whole roasted sea bass, fennel, cherry tomatoes, capers, olives.
Sliced dry-aged striploin from a farm in Prince Edward County, rocket, parmigiano shavings, balsamic reduction.
Slow-roasted rack of lamb, salsa verde, white bean puree.
Free-range chicken breast, capers, lemon, white wine, roasted potatoes.
Contorni
Sides. Made to go alongside, or to make a meal of their own.
Roasted potatoes, rosemary, garlic.
Sauteed broccolini, garlic, dried chili, olive oil.
Mixed leaves, shaved fennel, radish, red wine vinaigrette.
Wilted spinach, lemon, parmigiano.
Dolci
To finish. Carmela's recipes, mostly unchanged.
Carmela's recipe since 1974. Mascarpone, savoiardi, espresso, Marsala. No modifications.
Vanilla bean panna cotta, seasonal fruit compote.
Frozen pistachio semifreddo, dark chocolate sauce, candied pistachios.
Warm dark chocolate tart, vanilla gelato, fleur de sel.
